I know I am late getting this out there, but here is tonight's dinner recipe! I love salads, but the husband doesn't usually see salad as a complete entree. What won him over about this salad was an entire grilled chicken breast sliced and placed over the top, because protein! Duh. This reminds me of a tip: when you buy chicken breasts at the store, if you want to extend meals and save money, butterfly them and freeze half of them! This will double our amount of chicken. Let's face it, some of those chicken breasts we bring home are big enough for two anyway!
I digress. This salad was wonderful and tasted like a big bowl of summer! The peaches added a little natural sweetness, as did the honey in the dressing, but it wasn't overpowering. I don't like my main dishes, such as dinner, to be sweet, so My palate was very happy about this. I also love the creaminess of the goat cheese. The salad we made was huge, and we not used about half a log of goat cheese.
The dressing was also a winner! In the recipe, it calls for white balsamic vinegar for both the dressing and (I believe) the chicken marinade. However, I didn't have any on hand because truthfully I didn't know white balsamic exists! Instead, I swapped it for apple cider vinegar and it was absolutely delicious! Another addition I made to the recipe was to add sliced yellow and orange bell peppers into my salad. You can never have too many veggies! We have leftovers for tomorrow, and I can't wait for round two😋.
